Apricot and walnut cookies

Makes 20

3oz butter
6oz sugar
1 egg, beaten
6oz self-raising flour
Pinch of salt
2oz apricots, cut into small chunks
1oz walnuts, broken

Cream the butter and sugar until thick and fluffy. Beat in the egg gradually. Fold in the flour and salt with the walnuts and apricots. Place spoonfuls of the mixture well spaced on greased baking sheets. Place in a preheated oven at 350°F for about 15 minutes.
