We consoled ourselves with these muffins that Vickie cooked for the fact that Cadbury's world was closed, when we visited her and Ben in Dunedin. It went some way to easing the pain.
1 cup mashed ripe bananas
½ cup canola oil
¾ cup milk
1 egg
1tsp vanilla essence
2 cups self-raising flour
2tbsp cocoa
¾ cup sugar
½ cup chocolate chips
½tsp salt
¼tsp bicarb of soda
Mix the dry ingredients then in a separate bowl mix the milk, oil, egg and vanilla essence. Fold the mixture together gently then fill muffin cases or a greased muffin tray and bake for 10-15 minutes at 210°C .
