100g butter
175g caster sugar
2 eggs, lighly beaten
200g self-raising flour
200g ripe bananas
85ml milk
½tsp baking powder
1tsp grated nutmeg
125g sultanas
75g pecans, chopped
Cream the butter and sugar in a mixing bowl until pale and fluffy. Gradually beat in the eggs. Mash the bananas until completely smooth then beat into the creamed mixture with the buttermilk. Sift the flour and baking powder into the bowl. Add the nutmeg, sultanas and pecans; beat until smooth.
Spoon into a 1lb loaf tin and cook at 350°F for 55-60 minutes. Leave to stand for 5 minute before turning onto a wire rack.
