Lynda and Nigel cooked mountains of these buns for the Pirate Party at the SPC in Nelson.

Makes 2 large loaves

2 medium potatoes, cooked, mashed and returned to cooking water
3oz chocolate, melted with 2tbsp of butter
¼cup molasses (not blackstrap)
2tbsp yeast, activated in the normal way
½ cup strong coffee
3½tbsp honey
2tsp caraway seeds
½tsp cinnamon
½tsp nutmeg
3 cups rye flour
4 cups white flour
1tbsp salt

Mix the first 9 ingredients together when the spuds are lukewarm, then add the rye flour, white flour and salt. Knead for 5 mins, adding more white flour if necessary. Rise in greased bowl. Glaze with equal parts molasses and water mix. Slash loaves and bake for 45 mins at moderate temperature.
