Blueberry muffins

Makes 14 muffins

1¾ cups flour
3tsp baking powder
½tsp salt
¼ cup margarine
½ cup sugar
1 egg
¾ cup milk
1tsp vanilla
1 cup fresh/frozen blueberries

Put the flour, baking powder and salt in a bowl and stir. In a second bowl, squish the butter and sugar together (you can use your fingers) until they are mixed. Beat in the egg, milk and vanilla until it's quite smooth. Pour into the first bowl.

Stir until it's just mixed (it will be a bit lumpy) then gently fold in your blueberries.

Grease a muffin tray and fill about three quarters full. Bake for 25 minutes at 200°C .
