Do you know the muffin man? Muffins are good for breakfast or a snack any time but they really have to be eaten the same day or frozen. The key is not stirring the mixture too much.
Makes 12
Dry ingredients:
1½ cup white flour
¾ cup wholewheat flour
¾ cup brown sugar
2tsp baking powder
1tsp bicarbonate of soda
¼tsp salt
2tsp ground cinnamon
1tsp ground nutmeg
Wet ingredients:
1 cups milk
1 cup pumpkin puree
¼ cup canola oil
1tbsp molasses, warmed
1 egg
Fillings:
1 cup roasted pumpkin seeds
¾ cup raisins
Sift the dry ingredients together.
Whisk the wet ingredients, add the pumpkin seeds and raisins and pour into the dry mixture. Stir just until mixed. Do not overstir.
Spoon the batter into a greased muffin tin. Fill each cup nearly to the top.
Bake for 15 to 20 mins at 180°C . Cool for at least 10 mins before removing from the tin.
