Pumpkin breadcrumb cake

This is a delicious Austrian recipe from Debs, taken from the back of a packet of ground pumpkin seeds. She says "Don't worry if the cake mixture looks weird and green - it's supposed to be like that!"

Change units and quantities:

8 eggs, separated
200g sugar
80g breadcrumbs
200g pumpkin seeds, roasted and ground
8g vanilla sugar
2tbsp rum

Mix the egg yolks and two thirds of the sugar and the vanilla sugar until they are foamy. Add the breadcrumbs and pumpkin seeds.

Whisk the egg whites and the remaining sugar until they are stiff. Fold this into the cake mixture and bake for 40 mins at 180°C .
