Awooga, awooga - dangerously chocolate cake ahead! We've made Smartie-covered versions for Joel, Ben and Bryan's birthdays. You can hide messages in the Smarties from colour-blind friends.
Makes 8 servings
165g plain flour
85g cocoa powder
1tsp bicarbonate of soda
250g sugar
250ml milk
2 eggs, lightly beaten
125g butter
Chocolate fudge icing:
200g dark chocolate
125g butter
210g condensed milk
Preheat the oven to 350°F . Lightly grease a 20cm round cake tin and line with baking paper. Sift the plain flour, cocoa powder and bicarbonate of soda into a large bowl. Add the sugar. Combine the milk, eggs and butter then pour onto the dry ingredients. Spoon the mixture into the prepared tin and smooth the surface. Bake for 40-50 minutes. Leave the cake in the tin for 15 minutes before turning out onto a wire rack to cool completely. Cut the cake in half horizontally.
Prepare the fudge icing; coarsely chop the chocolate and place in a small saucepan with the butter and condensed milk. Stir over a low heat until the chocolate and butter have melted and the mixture is smooth. Remove from the heat. Allow to cool until thick and spreadable. Sandwich the cake halves together with the fudge icing then cover the top and sides of the cake.
