2L fresh yogurt
1tsp salt
cheesecloth
This is a very simple cheese made from yogurt. It tastes like a tangy cream cheese, and goes very well with mediterranean food. It can be made from shop-bought yogurt, or from yogurt that you've made yourself. Pour 2L of yogurt into a bowl and mix until smooth. Add the salt and stir well. Line a colander or seive with cheesecloth and pour the yogurt into it. Gently pull the corners of the cloth together and tie with string. Tie the package to a shelf in your fridge (you may have to remove one shelf to get the vertical space) and place a bowl underneath to catch the whey that drains out.
Leave in the fridge for at least 12 hours, until the whey has stopped dripping out of the cloth, then open the cloth, scoop the labneh out and form into a ball. Place into an airtight container and drissle with olive oil and store in the fridge.
It's best eaten covered in oil, with olives and pita bread. Mmmmm...
