Taken from The Outside Table, Food and flavours of the Nelson region.
1 cup shelled fresh walnuts
2 large handfuls of fresh basil
2 large cloves garlic
1tsp black pepper
1tsp salt
¼ cup olive oil
70g parmesan cheese
1tsp lemon juice
Chope the walnuts, basil and garlic together in a food processor. Addd the remaining ingredients and process until well mixed. In winter parsely can be subsituted for the basil.
