Black-eyed bean burgers

Makes 2 servings

400g can black-eyed beans, drained
1 shallot, finely sliced
1 spring onion, finely sliced
1 garlic clove, crushed
2tbsp fresh coriander, chopped
6 mushrooms
Tamari
Tabasco sauce
2tbsp groundnut oil

Thickly slice the mushrooms and sauté in some olive oil. Lightly mash the beans and mix all the ingredients together except the groundnut oil. Shape the bean mixtxure with the palms of your hand into 2 large or 4 medium burgers. Fry in the groundnut oil until brown and crisp, turning carefully with a fish slice.
