Makes 2 servings
6 flour tortillas
2tbsp oil
1 red onion
1 green pepper
1 red pepper
1 courgette
3 mushrooms
1 garlic clove
4fl oz salsa sauce
1tsp ground cumin
Chop the vegetables into narrow strips and fry in the oil over a medium heat for 5 minutes. Stir in salsa and cumin. Cover and cook for 5 minutes.
Warm the tortillas, spoon the mixture evenly down the centres of the warm tortillas, roll up and serve.
