Makes 3 servings
1lb fresh spinach or
8oz frozen spinach
8fl oz brown rice
1tsp butter
1tbsp oil
1 onion
16fl oz hot water
4oz cheddar cheese, grated
2 eggs, beaten
2tbsp chopped parsley
Freshly grated nutmeg
Seasoning
Topping:
2tbsp wholewheat breadcrumbs
1tbsp melted butter
1 generous pinch cayenne
Melt the butter and oil in a saucepan and soften the onion in it then stir in the rice to get it nicely coated. Add the hot water, stir once and simmer gently with a lid on for 40 minutes until the grains are tender. Pre-heat the oven to 375°F .
Cool the rice in a bowl then combine with the grated cheese. Stir in the eggs and parsely, followed by the chopped spinach. Season well and add a good grating of nutmeg.
Now place the mixture into a large oiled pie dish. Mix the breadcrumbs with the melted butter and cayenne and sprinkle over the top. Bake in the oven for about 35 minutes until the breadcrumbs are golden brown.
