Mushroom & chestnut plait

Makes 4 servings

1 large onion
2 cloves of garlic
100g mushrooms
100g nuts, ground
100g cooked chestnuts
100g breadcrumbs
1tbsp soy sauce
1tbsp lemon juice
2tsp mixed herbs
½tsp yeast extract
330g puff pastry
milk for brushing

Fry the onion, garlic and mushrooms until soft, then place in a blender with all the other ingredients except the pastry. Whizz to a rough consistency, which should be fairly firm. If it's too dry, add a little water.

Roll the pastry out to about A4 size and place on a lightly oiled baking tray. Pile up the mixture down the centre of the pastry. Make diagonal cuts 1cm wide around the edge of the pastry and fold over to look like a plait. Brush with milk and bake at 200°C for 40 mins.
