Spaghetti bolognaise

Makes 2 servings

1 onion
1 garlic clove
Olive oil for frying
4 mushrooms
6oz quorn mince
1tsp mixed herbs
1tbsp tomato purée
1 can tinned tomatoes
7oz spaghetti
Parmesan cheese, to serve

Cook the spaghetti in gently simmering water. Fry the onion and crushed garlic in olive oil for 2 - 3 minutes then add the mushrooms and quorn mince and cook for a further 5 minutes. Add the mixed herbs, tomato purée and tinned tomatoes then simmer for 10 -15 minutes until the sauce has reduced. Serve over the spaghetti with parmesan cheese to taste.
