Makes 16 portions
Plenty of ground pepper
2kg cottage cheese
1 fine diced onion
1tsp fine diced garlic
2 lemons, juice and grated zest
10 eggs
1 cup flour
Very large bunch pre-cooked and wrung out spinach, or spinach and parsley
Filo pastry
Line a large (30cm square) pie tin with filo pastry in the usual manner, brushing every second sheet with a mixture of olive oil and butter. Mix together the rest of the ingredients and put the filling in the tin. Top with more layers of filo pastry. Bake until golden brown.
