Makes 2 servings

Assorted vegetables
1 small onion
Slivers of ginger
1tsp Thai green curry paste
½ tin coconut milk
1 tin chickpeas, drained

Saute the vegetables and ginger then add the thai green curry paste. Mix in the coconut milk and simmer until vegetables are cooked. Add chickpeas. Squeeze in some lemon juice before serving.
