Basting sauce:
3tbsp olive oil
3tbsp balsamic vinegar
1tbsp soy sauce
1tbsp honey
1tbsp whole-grain mustard
1tbsp/tsp sweet chilli sauce/ harrisa
Kabobs:
8 wooden skewers
1 large courgette
1 cherry tomatoes
5 mushrooms
1 red onion
1 red/yellow pepper
Quorn pieces
Mix together the basting sauce ingredients, varying quantities according to taste.
Skewer the vegetables, alternating to create an attractive arrangement. Coat the kabobs with the basting sauce and grill under a medium heat, turning occasionally.
Serve with couscous or rice.
