Eve's pudding

Makes 4 servings

1lb cooking apples, peeled and cored
3oz demerara sugar
1 lemon, grated rind of
3oz butter
3oz caster sugar
1 egg, beaten
5oz self-raising flour
A little milk to mix

Grease a 1½pt ovenproof dish. Slice the apples and place in the dish. Sprinkle over the sugar and lemon rind.

Cream the fat and caster sugar together until pale and fluffy. Add the egg a little at a time, beating well after each addition. Fold in the flour with enough milk to give a smooth dropping consistency and spread the mixture over the apples. Bake in the oven at 350°F for 40-45 minutes until the apples are tender and the sponge mixture golden brown.
