Pancakes

Makes 8

4oz plain flour
Pinch of salt
1 egg
½pt milk
Vegetable oil for frying

Sift the flour and salt into a bowl and make a well in the centre. Break in the egg and beat well, then gradually beat in the milk, drawing in the flour from the sides to make a smooth batter. To make in a food processor, put the egg and liquid in first and add the flour and process for a few seconds only.

Heat a little oil in a frying pan, running it around the base and sides of the pan until hot. Pour off any surplus. Pour in just enough batter to thinly coat the base of the pan. Cook for 1-2 minutes until golden brown, turn or toss and cook the second side until golden. Transfer to a plate, cook the rest and pile on top of each other with greaseproof paper in between. Serve with sugar and lemon juice.
